Also known as Egg in the Basket, Egg in the Hole, etc. It's a delicious breakfast, lunch or dinner. This is an easy and fun dish that you can enjoy for breakfast or anytime of day.
If I'm making it for my husband I substitute olive oil for the butter. You can also fry the eggs hard and use two of the Egg in the Hole in the Toasts as the bread for a delicious sandwich.
Egg in the Hole in the Toast
- 2 slices good bread
- 2 eggs
- 1 teaspoon butter or olive oil
Add the butter or olive oil to a large nonstick skillet and preheat over medium heat for about 4 minutes. Using a medium-sized round cookie cutter (or a glass), remove the center of the bread. Add the two removed rounds (for munching) and the two slices of bread with holes removed. Gently crack each egg into the bread with the hole. Sprinkle each with salt and pepper, and cook for 1 1/2 minute. Flip all of the pieces of bread, add salt and pepper to the bread with the egg. Cook for 1 1/2 minutes, or until egg is as firm (or runny) as you like. 3 minutes of cooking time results in a over medium egg. Serve immediately.
