I read about Paleo Bread in Gwyneth Paltrow's eNewsletter "GOOP". Advertised as a nutty, protein-packed, gluten-free bread, I decided to give it a try. I'm not gluten intolerant, but I am sticking to a low-carb diet. Having a high protein bread alternative to add to my weekly routine sounded like a winner.
It's an easy bread to whip up. The flavor is nice. It's nutty, it's got a nice moist texture, but it reminds me more of banana bread than, say, wheat toast. I plan to try a variation of the paleo bread recipe that incorporates bananas (using Cooks Illustrated technique for removing moisture) and some chopped toasted pecans. I'll report back on that success... or failure!
UPDATE: I did make the paleo banana bread... to great success.
