A slightly different take on your average mashed potatoes. Sweet potatoes get a healthy helping of garlic to bring out their savory edge.
Roasted Garlic Mashed Sweet Potatoes
- 4-5 medium-sized sweet potatoes
- 4-5 garlic cloves
- 1-2 tablespoons olive oil
- 1 teaspoon honey
Preheat the oven to 375 degrees F.
Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. At the halfway mark for the potatoes, add the garlic (still in it's peel), a bit of olive oil, salt and pepper to a well-sealed foil packet in the oven. Roast garlic for about 25-30 minutes or until tender. Remove potatoes and garlic from the oven and scoop out the sweet potato insides as soon as they are cool enough to handle. Place the sweet potato meat into a bowl (or food processor) and add the roasted garlic (minus the peel), honey, olive oil, salt and pepper to taste. This also works nicely with a combo of butternut squash and sweet potato.
