Sorry for the long delay in posting. I was busy becoming a mom. The end of March, my husband and I welcomed a beautiful baby boy to our family! We're still cooking up a storm at our household, but they tend to be easier recipes...
This was a meal we had back in April (actually prepared by my mom). It's a delicious and easy way to prepare corned beef so I thought I'd share. Served with the corned beef were asparagus in a lemon vinaigrette and roasted vegetables.
Easy Corned Beef
- ~ 2 lb. cured brisket
- 4 bay leaves
- 1 tablespoon whole all spice
- 1/4 cup yellow mustard
- 1/4 cup brown sugar, lightly packed
Remove brisket from package, rinse under cold water and place in slow cooker. Add seasoning package that comes with brisket, plus bay leaves and whole all spice. Cover brisket with cold water, plus one inch. Set slow cooker to low for 9-10 hours. Remove from slow cooker and preheat oven broiler to high. Mix yellow mustard with brown sugar in a small bowl. Spread glaze over corned beef and place in oven until glaze is starting to bubble and brown, 8-12 minutes. Let rest 5 minutes, then slice and serve.
