An easy weeknight throw-together meal. I had some chicken sausages flavored with sage that I seared off, removed from the pan, and then sweated onions & mushrooms until they were golden. I added minced garlic, a bit of tomato paste, deglazed the pan with some balsamic vinegar and added a large can of diced tomatoes. Simmer until the flavors come together & put the chicken sausage back in to warm up (10 minutes). Toss with hot pasta and serve. Yummy dinner!
