We're still enjoying the bounty of our tomato crop. I made a variation on a tomato basil quiche recipe found here: http://allrecipes.com/Recipe/Tomato-and-Basil-Quiche/Detail.aspx. I substituted dairy for soy milk, cut out the cheese and added a tablespoon of flour. Turned out well, although if you can eat dairy it would probably be even nicer to follow the recipe! Enjoy.
