My husband and I went camping this weekend and we wanted to make a hot breakfast. We started with a little olive oil in a cast iron skillet & added lots of tomatoes, one medium sized onion and some salt and pepper. We let it soften and then reduced the tomato liquid. We made 4 "cups" into the tomato onion mixture and added the eggs. Once cooked to our liking we ate the eggs with bread we toasted over the fire. It was a really delicious and simple breakfast!
